Greek Tzatziki

Tzatziki is a creamy cucumber dip made with yogurt, fresh dill, lemon, and garlic that's delicious on pita, in gyros, on lamb, or whatever you like!

Ingredients
  

  • 2 32-ounce containers plain low-fat yogurt
  • 2 English cucumbers peeled, seeded, and grated
  • 4 cloves garlic minced
  • 3 tablespoons fresh dill finely chopped
  • Juice of 1 lemon about 2 tablespoons
  • 2 tablespoons extra-virgin olive oil
  • Salt and freshly ground black pepper to taste

Method
 

  1. Place the grated cucumber in a fine-mesh sieve or cheesecloth. Sprinkle lightly with salt and let drain for 10 minutes to remove excess water.
  2. In a large bowl, combine the yogurt, minced garlic, chopped dill, lemon juice, and olive oil. Stir until smooth and creamy.
  3. Unwrap or press the cucumber to release any remaining liquid. Add the cucumber to the yogurt mixture and stir gently.
  4. Season with salt and pepper to taste. Cover and refrigerate for at least 15 minutes to allow flavors to meld.
  5. Before serving, give the tzatziki a quick stir. Adjust seasoning if needed.
  6. Garnish with a drizzle of olive oil and a sprig of dill for a beautiful presentation.
