Method
- Gather all ingredients and preheat an outdoor grill to medium heat. Lightly oil the grates to prevent sticking.
- In a small bowl, combine the softened butter, lemon zest, lemon juice, garlic, parsley, and oregano. Stir well to create a smooth lemon herb butter.
- Season each halibut fillet with salt and pepper on both sides. Brush the fillets lightly with olive oil.
- Place halibut on the grill. Cook for 5–6 minutes per side, brushing occasionally with the lemon herb butter, until the fish flakes easily with a fork.
- Remove halibut from the grill and let rest for 2 minutes. Top each fillet with a pat of the remaining lemon herb butter.
- Serve hot with your favorite sides—grilled vegetables, rice pilaf, or a crisp green salad.
