Grilled Halibut

Grilled halibut is made extra tasty thanks to a lemon and herb butter that adds so much flavor to the fish as it cooks on the grill in 20 minutes.

Ingredients
  

  • 4 halibut fillets 6 oz each, patted dry
  • ¾ cup butter softened
  • 1 lemon zested and juiced
  • 2 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper to taste
  • Olive oil or cooking spray for grill grates

Method
 

  1. Gather all ingredients and preheat an outdoor grill to medium heat. Lightly oil the grates to prevent sticking.
  2. In a small bowl, combine the softened butter, lemon zest, lemon juice, garlic, parsley, and oregano. Stir well to create a smooth lemon herb butter.
  3. Season each halibut fillet with salt and pepper on both sides. Brush the fillets lightly with olive oil.
  4. Place halibut on the grill. Cook for 5–6 minutes per side, brushing occasionally with the lemon herb butter, until the fish flakes easily with a fork.
  5. Remove halibut from the grill and let rest for 2 minutes. Top each fillet with a pat of the remaining lemon herb butter.
  6. Serve hot with your favorite sides—grilled vegetables, rice pilaf, or a crisp green salad.
