- Gather all ingredients and rinse the beans thoroughly.
- Soak beans overnight in water to soften.
- Drain beans, then add to a large pot with 6 cups of fresh water.
- Bring to a boil, reduce heat, and simmer for 2 hours until beans are tender.
- Stir in diced ham, diced onion, brown sugar, paprika, and black pepper.
- Continue to simmer for another 30 minutes, stirring occasionally.
- Season with salt to taste and let rest for 10 minutes before serving.
