Ingredients
  

  • 1 tablespoon olive oil
  • 1 large onion diced
  • 2 carrots peeled and sliced
  • 2 celery stalks chopped
  • 3 cloves garlic minced
  • 4 cups low-sodium chicken broth
  • 2 cups cooked shredded chicken breast
  • 1 package 16 oz potato gnocchi
  • 1 cup heavy cream
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons fresh parsley chopped (optional garnish)

Method
 

  1. Heat the olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté until softened, about 5 minutes.
  2. Stir in garlic and cook for 30 seconds until fragrant. Tip: Don’t let the garlic burn—toss it with veggies right away.
  3. Pour in chicken broth and bring to a gentle boil.
  4. Add shredded chicken and gnocchi, simmer until gnocchi float to the surface, about 3–5 minutes.
  5. Reduce heat to low, stir in heavy cream, and season with salt and pepper. Warm through but don’t let it boil.
  6. Ladle the soup into bowls and garnish with chopped parsley for a pop of color.
  7. Serve hot alongside crusty bread or a green salad.
