Method
- Melt the butter in a large Dutch oven or heavy-bottomed pot over medium heat.
- Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables begin to soften.
- Add the minced garlic and cook for another 30 seconds until fragrant.
- Add the split peas, diced ham, ham bone (if using), chicken broth, bay leaves, thyme, and black pepper.
- Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for about 60-75 minutes, stirring occasionally, until the peas are completely soft and breaking down.
- Remove the ham bone or ham hock if used. Take any remaining meat off the bone, dice it, and return it to the soup.
- Remove the bay leaves and discard.
- For a smoother texture, use an immersion blender to partially blend the soup, or transfer about half of the soup to a blender, blend until smooth, and return to the pot.
- Taste and adjust seasoning with salt and pepper if needed.
- Serve hot, garnished with fresh parsley and croutons if desired.
