Hearty Homemade Turkey Chili

Ingredients
  

  • pounds lean ground turkey
  • 1 large onion diced
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 28 oz can diced tomatoes, undrained
  • 1 15 oz can tomato sauce
  • 1 15 oz can kidney beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • ½ teaspoon cayenne pepper adjust to taste
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper
  • 1 cup low-sodium chicken broth if needed for consistency

Method
 

  1. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium heat.
  2. Add diced onions and cook until translucent, about 4-5 minutes.
  3. Add minced garlic and cook for another 30 seconds until fragrant.
  4. Add ground turkey to the pot and break it apart with a wooden spoon. Cook until no longer pink, about 5-7 minutes.
  5. Stir in chili powder, cumin, oregano, paprika, cayenne, salt, and pepper. Cook for 1 minute to toast the spices and enhance their flavors.
  6. Pour in the diced tomatoes with their juice and tomato sauce. Stir to combine.
  7. Add kidney beans and stir everything together.
  8. If the chili seems too thick, add chicken broth until you reach your desired consistency.
  9. Bring to a boil, then reduce heat to low. Cover and simmer for at least 30 minutes, stirring occasionally. For deeper flavor, simmer for 45-60 minutes.
  10. Taste and adjust seasonings as needed. If you prefer more heat, add additional cayenne pepper.
  11. Serve hot with your favorite toppings.
