Ingredients
  

  • 2 pounds frozen hash brown potatoes thawed
  • 1 pound ground pork sausage
  • 8 large eggs
  • 2 cups shredded sharp cheddar cheese
  • 1 cup whole milk
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper any color
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh chives chopped (for garnish)

Method
 

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  2. In a large skillet over medium-high heat, cook the sausage, breaking it apart with a spoon until browned and no longer pink, about 5-7 minutes. Drain excess fat.
  3. Spread the thawed hash browns evenly in the bottom of the prepared baking dish.
  4. Sprinkle the cooked sausage over the hash browns, then add the diced onions and bell peppers.
  5. In a large bowl, whisk together the eggs, milk, garlic powder, salt, and pepper until well combined.
  6. Pour the egg mixture evenly over the hash brown and sausage layer.
  7. Sprinkle the shredded cheddar cheese evenly across the top.
  8. Cover with aluminum foil and bake for 50 minutes.
  9. Remove the foil and bake for an additional 10-15 minutes or until the center is set and the top is golden brown.
  10. Let the casserole rest for 10 minutes before cutting. Garnish with fresh chives before serving.
