Ingredients
  

  • 1 box 16 oz angel food cake mix
  • 1 can 20 oz crushed pineapple in juice (undrained)
  • 1 container 8 oz whipped topping, thawed (for serving)
  • Cooking spray
  • Fresh mint leaves for garnish optional
  • Additional fresh pineapple chunks optional, for serving

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Lightly coat a 9x13-inch baking pan with cooking spray.
  3. In a large mixing bowl, combine the dry angel food cake mix and the entire can of crushed pineapple with juice. Do not add water or other ingredients called for on the cake mix box.
  4. Gently fold the ingredients together until well combined. The mixture will foam and expand as the acidic pineapple reacts with the cake mix.
  5. Pour the batter into the prepared baking pan, spreading it evenly.
  6. Bake in the preheated oven for 25-30 minutes or until the top is golden brown and springs back when lightly touched.
  7. Remove from oven and allow to cool completely in the pan before serving.
  8. Once cooled, slice into squares and serve with a dollop of whipped topping.
