- Preheat oven to 350°F (175°C). Spread pistachios on a baking sheet and toast for about 5 minutes until fragrant. Remove and let cool slightly.
- Transfer the Boursin cheese to a shallow bowl or small serving platter. Use a spatula to smooth it into an even layer.
- Scatter the toasted pistachios over the cheese. Drizzle with honey and sprinkle with lemon zest if desired.
- Garnish with fresh thyme leaves. Serve immediately alongside crackers or crostini.
