Homemade Apple Cider

Ingredients
  

  • 10 large apples quartered
  • 8 cups water
  • ½ cup granulated sugar
  • 2 cinnamon sticks or 1 teaspoon ground cinnamon
  • ½ teaspoon ground allspice

Method
 

  1. Gather all ingredients and a large, heavy-bottomed pot.
  2. Combine apples and water in the pot; stir in sugar, cinnamon sticks, and allspice.
  3. Bring to a gentle boil over medium heat, then reduce heat to low.
  4. Simmer, covered, for 2½–3 hours, stirring occasionally until apples are very soft.
  5. Use a potato masher or the back of a spoon to mash the soft apples against the pot sides.
  6. Place a fine-mesh sieve or cheesecloth over a large bowl and strain the mixture, pressing to extract every drop of juice.
  7. Discard the solids. Serve your warm, spiced apple cider immediately or chill for a refreshing cold fall drink.
