Method
- Gather all ingredients and a large, heavy-bottomed pot.
- Combine apples and water in the pot; stir in sugar, cinnamon sticks, and allspice.
- Bring to a gentle boil over medium heat, then reduce heat to low.
- Simmer, covered, for 2½–3 hours, stirring occasionally until apples are very soft.
- Use a potato masher or the back of a spoon to mash the soft apples against the pot sides.
- Place a fine-mesh sieve or cheesecloth over a large bowl and strain the mixture, pressing to extract every drop of juice.
- Discard the solids. Serve your warm, spiced apple cider immediately or chill for a refreshing cold fall drink.
