- In a large bowl, toss sliced apples with lemon juice to prevent browning.
- In a separate bowl, whisk together granulated sugar, brown sugar, flour, cinnamon, nutmeg, cloves, and salt.
- Sprinkle the sugar mixture over the apples and toss until evenly coated.
- In a large saucepan or Dutch oven, melt butter over medium heat.
- Add the apple mixture and water (or apple cider) to the pot.
- Bring to a simmer, stirring frequently, and cook for 8-10 minutes until apples are slightly tender but not mushy.
- Remove from heat and stir in vanilla extract.
- Allow the filling to cool completely before using in a pie or storing.
