- Preheat your oven to 350°F (175°C). While the oven heats up, place the butter in an 8-inch square baking dish and put it in the oven to melt completely.
- In a medium mixing bowl, whisk together the flour, 1 cup sugar, baking powder, and salt until well combined.
- Pour in the milk and vanilla extract, whisking gently until the batter is just mixed. A few small lumps are perfectly fine.
- Once the butter has melted completely in the baking dish (about 3-5 minutes), carefully remove it from the oven.
- Pour the batter directly over the melted butter in the baking dish. Do not stir - this is key to creating that perfect cobbler texture!
- In a separate bowl, toss the blueberries with the remaining ½ cup sugar, lemon juice (if using), and cinnamon (if using).
- Sprinkle the blueberry mixture evenly over the batter. Again, do not stir.
- Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the edges are bubbling with blueberry goodness.
- Remove from oven and allow to cool for at least 10 minutes before serving.
