  • ½ cup 1 stick unsalted butter
  • 1 cup all-purpose flour
  • cups granulated sugar divided (1 cup for batter, ½ cup for berries)
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 1 cup milk whole milk works best
  • 4 cups fresh blueberries rinsed and patted dry
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice optional
  • teaspoon ground cinnamon optional

Method
 

  1. Preheat your oven to 350°F (175°C). While the oven heats up, place the butter in an 8-inch square baking dish and put it in the oven to melt completely.
  2. In a medium mixing bowl, whisk together the flour, 1 cup sugar, baking powder, and salt until well combined.
  3. Pour in the milk and vanilla extract, whisking gently until the batter is just mixed. A few small lumps are perfectly fine.
  4. Once the butter has melted completely in the baking dish (about 3-5 minutes), carefully remove it from the oven.
  5. Pour the batter directly over the melted butter in the baking dish. Do not stir - this is key to creating that perfect cobbler texture!
  6. In a separate bowl, toss the blueberries with the remaining ½ cup sugar, lemon juice (if using), and cinnamon (if using).
  7. Sprinkle the blueberry mixture evenly over the batter. Again, do not stir.
  8. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the edges are bubbling with blueberry goodness.
  9. Remove from oven and allow to cool for at least 10 minutes before serving.
