Method
- Pour 1 cup of whole milk into a small saucepan and warm over medium heat until it just starts to simmer.
- Remove from heat and stir in 1 tablespoon of vinegar (or lemon juice).
- Let the mixture sit for 1–2 minutes, stirring gently until curds and whey separate.
- Strain through a fine mesh sieve or cheesecloth, then season with 1/4 teaspoon of salt and stir to combine.
