Ingredients
  

  • 1 cup whole milk
  • 1 tablespoon white vinegar or lemon juice
  • 1/4 teaspoon salt

Method
 

  1. Pour 1 cup of whole milk into a small saucepan and warm over medium heat until it just starts to simmer.
  2. Remove from heat and stir in 1 tablespoon of vinegar (or lemon juice).
  3. Let the mixture sit for 1–2 minutes, stirring gently until curds and whey separate.
  4. Strain through a fine mesh sieve or cheesecloth, then season with 1/4 teaspoon of salt and stir to combine.
