Ingredients
  

  • 1 ½ cups medium-grain white rice
  • 3 cups whole milk
  • 1 cup heavy cream
  • ½ cup granulated sugar
  • ¼ teaspoon salt
  • 2 large eggs
  • cup golden raisins
  • 1 tablespoon vanilla extract
  • ½ teaspoon ground cinnamon plus more for serving
  • ¼ teaspoon freshly grated nutmeg optional

Method
 

  1. In a large saucepan, combine rice and 1½ cups cold water. Bring to a boil over medium-high heat.
  2. Reduce heat to low, cover, and simmer for 15-18 minutes until water is absorbed and rice is tender.
  3. Add milk, cream, sugar, and salt to the cooked rice. Stir to combine.
  4. Increase heat to medium and bring mixture to a gentle simmer. Cook uncovered for 15-20 minutes, stirring frequently to prevent sticking, until mixture begins to thicken.
  5. In a small bowl, beat the eggs. Slowly add ½ cup of the hot rice mixture to the eggs while whisking constantly (this tempers the eggs and prevents scrambling).
  6. Gradually pour the egg mixture back into the saucepan with the rice, stirring continuously.
  7. Add golden raisins, vanilla extract, cinnamon, and nutmeg (if using). Cook for an additional 2-3 minutes until pudding thickens further.
  8. Remove from heat. The pudding will continue to thicken as it cools.
  9. Serve warm or chilled, with an additional sprinkle of cinnamon on top if desired.
