  • ½ cup ground dried New Mexico chiles
  • ¼ cup sweet paprika
  • 1 tablespoon cayenne pepper
  • 1 tablespoon onion powder
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 tablespoon ground cardamom
  • 2 teaspoons ground ginger
  • 2 teaspoons ground fenugreek
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • 1 teaspoon ground black pepper
  • ½ teaspoon ground cloves
  • ½ teaspoon ground nutmeg
  • ½ teaspoon garlic powder
  • ½ teaspoon salt

Method
 

  1. Gather all ingredients and ensure they're fresh for maximum flavor.
  2. Combine the ground dried New Mexico chiles and paprika in a medium bowl.
  3. Add the cayenne pepper, onion powder, ground cumin, and ground coriander. Mix well.
  4. Incorporate the cardamom, ginger, and fenugreek, continuing to mix.
  5. Add the remaining spices: cinnamon, allspice, black pepper, cloves, nutmeg, garlic powder, and salt.
  6. Whisk everything together until thoroughly combined and uniform in color.
  7. Transfer to an airtight container for storage.
