Ingredients

  • 2 tablespoons fresh lemon juice
  • 4 cups peeled cored, and thinly sliced tart apples (about 4 medium apples)
  • 2/3 cup granulated sugar
  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons unsalted butter
  • 1 package 17.25 ounces frozen puff pastry sheets, thawed
  • 1 large egg beaten
  • 1 tablespoon water
  • 1 cup powdered sugar for glaze
  • 1-2 tablespoons milk for glaze
  • 1/2 teaspoon vanilla extract for glaze

Method

  1. Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
  2. In a large bowl, toss the sliced apples with lemon juice to prevent browning.
  3. In a separate bowl, mix together sugar, flour, cinnamon, and nutmeg. Add this mixture to the apples and toss until evenly coated.
  4. In a large skillet over medium heat, melt butter. Add the apple mixture and cook for about 5-7 minutes, stirring occasionally, until apples are slightly softened and the mixture has thickened. Remove from heat and allow to cool for 10 minutes.
  5. On a lightly floured surface, unfold the puff pastry sheets. Roll each sheet to a 12x12 inch square and cut each sheet into 4 equal squares.
  6. Place about 1/4 cup of the apple filling in the center of each square. Avoid overfilling to prevent leakage during baking.
  7. In a small bowl, whisk together egg and water to make an egg wash. Brush the edges of each pastry square with the egg wash.
  8. Fold each square diagonally to create triangles, enclosing the filling. Press the edges firmly with a fork to seal.
  9. Transfer the turnovers to the prepared baking sheets. Brush the tops with the remaining egg wash and cut small slits in the top of each turnover to allow steam to escape.
  10. Bake for 20-25 minutes or until golden brown and puffed. Cool on the baking sheets for 5 minutes before transferring to a wire rack.
  11. While the turnovers are cooling, prepare the glaze if desired: In a small bowl, whisk together powdered sugar, milk, and vanilla until smooth.
  12. Once the turnovers are slightly cooled but still warm, drizzle with the glaze if using. Serve warm or at room temperature.
