Method
- Gather all ingredients and preheat the oven to 400 °F (200 °C).
- In a bowl, combine the flour, a pinch of salt, and cold butter. Use a pastry cutter or fingers to blend until the mixture resembles coarse crumbs. Press dough into a 9-inch pie pan, forming an even crust.
- In another bowl, whisk together fresh pumpkin puree, eggs, sugar, cream, cinnamon, nutmeg, ginger, and cloves until smooth and well-combined.
- Pour the spiced pumpkin filling into the prepared crust. Bake at 400 °F (200 °C) for 15 minutes to set the edges.
- Reduce the oven temperature to 350 °F (175 °C) and continue baking for 25–30 minutes, or until the center is just set and a knife inserted near the center comes out clean.
- Allow the pie to cool completely on a wire rack. For clean slices, chill in the refrigerator for at least 2 hours before serving.
