Method
- Preheat your oven to 325°F (165°C). Remove the ham from packaging and discard any included glaze packets. Place the ham cut-side down in a large roasting pan.
- Cover the ham tightly with aluminum foil and bake for 1 hour and 15 minutes, or until the internal temperature reaches 110°F (45°C).
- While the ham is baking, prepare your honey glaze. In a medium saucepan over medium heat, combine honey, brown sugar, butter, Dijon mustard, apple cider vinegar, cinnamon, cloves, nutmeg, and ginger.
- Bring the mixture to a simmer, stirring occasionally, until the sugar has dissolved and the mixture is well combined, about 5 minutes. Remove from heat and set aside.
- After the initial baking time, remove the ham from the oven and increase the oven temperature to 400°F (200°C).
- Carefully remove the foil from the ham. Using a pastry brush, generously coat the entire surface of the ham with about 1/3 of the glaze, making sure to get in between the slices.
- Return the ham to the oven, uncovered, and bake for 15 minutes. Remove and apply another 1/3 of the glaze.
- Return to the oven for another 15 minutes, then remove and apply the remaining glaze.
- For the final baking stage, return the ham to the oven and bake for an additional 15-20 minutes, or until the glaze has caramelized and the internal temperature reaches 140°F (60°C).
- Remove from the oven and let rest for 15 minutes before serving to allow the juices to redistribute.
