- In a large mixing bowl, combine heavy cream, milk, sugar, and salt. Whisk until the sugar is completely dissolved, about 2-3 minutes.
- Add peppermint extract and vanilla extract. Start with a smaller amount of peppermint extract and taste, adding more if desired for a stronger mint flavor.
- If using food coloring, add a few drops and stir until you achieve your desired shade of green.
- Cover the bowl and refrigerate the mixture for at least 1 hour, or until thoroughly chilled.
- If using an ice cream maker: Pour the chilled mixture into your ice cream maker and churn according to manufacturer's instructions (usually about 20-25 minutes).
- In the last 5 minutes of churning, slowly add the chocolate chips to distribute evenly throughout the ice cream.
- Transfer the ice cream to an airtight container. For a softer scoop, let it sit at room temperature for 5-10 minutes before serving.
- Garnish with fresh mint leaves if desired.
