Ingredients
  

  • 2 cups heavy cream
  • 2 cups whole milk
  • 1 cup granulated sugar
  • ½ teaspoon salt
  • 1 tablespoon pure peppermint extract
  • 1 teaspoon pure vanilla extract
  • 6-8 drops green food coloring optional
  • cups mini chocolate chips or finely chopped dark chocolate
  • Fresh mint leaves for garnish optional

Method
 

  1. In a large mixing bowl, combine heavy cream, milk, sugar, and salt. Whisk until the sugar is completely dissolved, about 2-3 minutes.
  2. Add peppermint extract and vanilla extract. Start with a smaller amount of peppermint extract and taste, adding more if desired for a stronger mint flavor.
  3. If using food coloring, add a few drops and stir until you achieve your desired shade of green.
  4. Cover the bowl and refrigerate the mixture for at least 1 hour, or until thoroughly chilled.
  5. If using an ice cream maker: Pour the chilled mixture into your ice cream maker and churn according to manufacturer's instructions (usually about 20-25 minutes).
  6. In the last 5 minutes of churning, slowly add the chocolate chips to distribute evenly throughout the ice cream.
  7. Transfer the ice cream to an airtight container. For a softer scoop, let it sit at room temperature for 5-10 minutes before serving.
  8. Garnish with fresh mint leaves if desired.
