Homemade Peanut Butter & Carrot Dog Cake

Ingredients
  

  • 1 large egg
  • 1/4 cup natural peanut butter unsalted, xylitol-free
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/3 cup honey
  • 1 cup shredded carrots
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 8 oz plain Greek yogurt unsweetened
  • 2 tablespoons natural peanut butter
  • 1 tablespoon honey optional

Method
 

  1. Preheat your oven to 350°F (175°C). Thoroughly grease a 6-cup ring mold or fluted tube pan with a small amount of vegetable oil.
  2. In a large mixing bowl, whisk the egg until lightly beaten. Add the peanut butter, vegetable oil, vanilla extract, and honey, mixing until well combined.
  3. Stir in the shredded carrots until evenly distributed throughout the mixture.
  4. In a separate bowl, whisk together the whole wheat flour and baking soda.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  6. Pour the batter into your prepared cake pan, smoothing the top with a spatula.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes before carefully turning it out onto a wire rack to cool completely (about 20 more minutes).
  9. While the cake is cooling, prepare the frosting by mixing the Greek yogurt with peanut butter and honey (if using) until smooth and creamy.
  10. Once the cake has completely cooled, spread the frosting generously over the top and sides.
  11. Decorate with dog biscuits, carrot pieces, or blueberries if desired.
