- Preheat your oven to 350°F (175°C). Thoroughly grease a 6-cup ring mold or fluted tube pan with a small amount of vegetable oil.
- In a large mixing bowl, whisk the egg until lightly beaten. Add the peanut butter, vegetable oil, vanilla extract, and honey, mixing until well combined.
- Stir in the shredded carrots until evenly distributed throughout the mixture.
- In a separate bowl, whisk together the whole wheat flour and baking soda.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
- Pour the batter into your prepared cake pan, smoothing the top with a spatula.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before carefully turning it out onto a wire rack to cool completely (about 20 more minutes).
- While the cake is cooling, prepare the frosting by mixing the Greek yogurt with peanut butter and honey (if using) until smooth and creamy.
- Once the cake has completely cooled, spread the frosting generously over the top and sides.
- Decorate with dog biscuits, carrot pieces, or blueberries if desired.
