  • 1 cup water
  • ¾ cup white granulated sugar
  • cup rice vinegar or white vinegar in a pinch
  • 3 tablespoons fish sauce
  • 2 tablespoons minced garlic
  • 2 tablespoons sambal oelek ground fresh chile paste
  • 1 tablespoon sriracha sauce adjust for heat preference
  • 2 tablespoons cornstarch mixed with 3 tablespoons cool water
  • 1 tablespoon finely grated fresh ginger
  • 2 teaspoons red pepper flakes optional, for extra heat

Method
 

  1. Gather all ingredients before starting to ensure a smooth cooking process.
  2. In a medium saucepan, combine water, sugar, rice vinegar, fish sauce, minced garlic, chile paste, sriracha, and ginger.
  3. Bring the mixture to a gentle boil over medium heat, stirring occasionally.
  4. Reduce heat to low and simmer for 5 minutes to allow the flavors to meld together.
  5. In a small bowl, whisk together the cornstarch and cool water until smooth.
  6. While stirring constantly, slowly pour the cornstarch mixture into the simmering sauce.
  7. Continue cooking and stirring for 2-3 minutes until the sauce thickens to your desired consistency.
  8. Add red pepper flakes if you prefer an extra kick of heat.
  9. Remove from heat and allow to cool completely before transferring to a glass jar.
