  • 1 pound lean ground beef
  • 1 medium onion diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 1/2 cups shredded sharp cheddar cheese divided
  • 1/2 cup biscuit baking mix like Bisquick
  • 1 cup milk
  • 2 large eggs
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1/2 teaspoon garlic powder
  • Cooking spray for greasing the pie dish

Method
 

  1. Preheat your oven to 400°F (200°C). Spray a 9-inch glass pie dish thoroughly with cooking spray.
  2. In a large skillet over medium-high heat, cook the ground beef and diced onion until the meat is browned and no longer pink, about 5-7 minutes. Break the meat into small crumbles as it cooks.
  3. Drain any excess grease from the skillet. Season the beef mixture with salt, pepper, and garlic powder. Stir in the ketchup and mustard until well combined.
  4. Transfer the seasoned beef mixture to the prepared pie dish, spreading it evenly across the bottom. Sprinkle 1 cup of the shredded cheddar cheese over the beef layer.
  5. In a medium bowl, whisk together the biscuit mix, milk, and eggs until smooth. The mixture will be quite thin, resembling pancake batter.
  6. Pour the batter evenly over the cheese and beef layers in the pie dish. The batter will seep through to the bottom, creating a perfect crust as it bakes.
  7. Bake in the preheated oven for 25 minutes, then remove and sprinkle the remaining 1/2 cup of cheddar cheese over the top.
  8. Return to the oven and bake for an additional 5-10 minutes, until the top is golden brown and a knife inserted in the center comes out clean.
  9. Allow the pie to rest for 5-10 minutes before slicing and serving. This helps it set up properly for cleaner slices.
