- Preheat your oven to 400°F (200°C). Spray a 9-inch glass pie dish thoroughly with cooking spray.
- In a large skillet over medium-high heat, cook the ground beef and diced onion until the meat is browned and no longer pink, about 5-7 minutes. Break the meat into small crumbles as it cooks.
- Drain any excess grease from the skillet. Season the beef mixture with salt, pepper, and garlic powder. Stir in the ketchup and mustard until well combined.
- Transfer the seasoned beef mixture to the prepared pie dish, spreading it evenly across the bottom. Sprinkle 1 cup of the shredded cheddar cheese over the beef layer.
- In a medium bowl, whisk together the biscuit mix, milk, and eggs until smooth. The mixture will be quite thin, resembling pancake batter.
- Pour the batter evenly over the cheese and beef layers in the pie dish. The batter will seep through to the bottom, creating a perfect crust as it bakes.
- Bake in the preheated oven for 25 minutes, then remove and sprinkle the remaining 1/2 cup of cheddar cheese over the top.
- Return to the oven and bake for an additional 5-10 minutes, until the top is golden brown and a knife inserted in the center comes out clean.
- Allow the pie to rest for 5-10 minutes before slicing and serving. This helps it set up properly for cleaner slices.
