- Gather all ingredients and lightly grease the bowl of your slow cooker.
- Arrange chicken thighs in a single layer at the bottom of the crockpot.
- In a bowl, whisk together honey, soy sauce, garlic, ketchup, onion powder, and pepper until smooth.
- Pour the honey-garlic mixture over the chicken, coating each piece evenly.
- Cover and cook on LOW for 4–6 hours (or HIGH for 2–3 hours) until chicken is fork-tender.
- For a thicker glaze, remove the chicken, simmer the sauce on the stovetop until reduced, then toss chicken back in.
- Serve hot over rice, mashed potatoes, or roasted veggies. Garnish with chopped green onions or sesame seeds.
