  • 8 medium carrots peeled
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method
 

  1. Gather all ingredients and preheat the oven to 350°F (175°C).
  2. Toss carrots with honey, olive oil, salt, and pepper until evenly coated.
  3. Arrange carrots in a single layer on a parchment-lined baking sheet.
  4. Roast for 30 minutes, flipping halfway through, until carrots are tender and edges are caramelized.
  5. Remove from oven and let rest 5 minutes before serving.
