Ingredients
  

  • 1 pound unsalted butter softened
  • 3 cups dark brown sugar packed
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 2 ounces dark or spiced rum per serving
  • Hot water for serving

Method
 

  1. In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
  2. Stir in cinnamon, nutmeg, cloves, vanilla extract, and a pinch of salt until well combined.
  3. Transfer the buttered rum batter into a sealed jar and refrigerate for at least 1 hour to firm up.
  4. To serve, spoon 2 tablespoons of the chilled batter into a heatproof mug.
  5. Add 2 ounces of dark or spiced rum, then top with hot water.
  6. Stir until the batter fully dissolves into the liquid.
  7. Garnish with a cinnamon stick or a sprinkle of freshly grated nutmeg, and enjoy hot.
