Method
- Place tuna into a mixing bowl and lightly break it apart with a fork.
- Add celery, green onion, capers, mayonnaise, and chile paste. Pinch in mozzarella and stir to combine.
- Season with salt and pepper, then refrigerate the tuna salad until ready to use.
- Preheat a skillet over medium heat. Butter one side of each bread slice.
- On the unbuttered side of two slices, spread the chilled tuna mixture. Top with the remaining bread, buttered side out.
- Grill each sandwich for 2–3 minutes per side, until the bread is golden and the cheese is gooey.
- Slice in half and serve immediately for the perfect melty tuna melt.
