- Heat olive oil in a large skillet over medium heat. Add diced onion and sauté until translucent. Add minced garlic and cook for 1 minute.
- Add ground beef or chicken. Break it apart with a spatula and cook until browned and cooked through, about 5–7 minutes.
- Stir in chili powder, cumin, smoked paprika, cayenne, salt, and pepper. Mix well and cook 1–2 minutes so the spices bloom.
- Warm tortillas in a dry skillet over low heat for about 30 seconds per side, or until pliable.
- Spoon filling onto each tortilla. Top with shredded lettuce, diced tomatoes, diced red onion, and avocado slices.
- Garnish with fresh cilantro and serve with lime wedges for squeezing over the tacos.
