Ingredients

  • 1 lb ground beef or chicken
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper adjust to taste
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1 avocado sliced
  • Fresh cilantro for garnish
  • Lime wedges for serving

Method

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and sauté until translucent. Add minced garlic and cook for 1 minute.
  2. Add ground beef or chicken. Break it apart with a spatula and cook until browned and cooked through, about 5–7 minutes.
  3. Stir in chili powder, cumin, smoked paprika, cayenne, salt, and pepper. Mix well and cook 1–2 minutes so the spices bloom.
  4. Warm tortillas in a dry skillet over low heat for about 30 seconds per side, or until pliable.
  5. Spoon filling onto each tortilla. Top with shredded lettuce, diced tomatoes, diced red onion, and avocado slices.
  6. Garnish with fresh cilantro and serve with lime wedges for squeezing over the tacos.
