Ingredients
  

  • 3 tablespoons olive oil
  • 1 large onion finely chopped
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder adjust to taste
  • 1 pound boneless skinless chicken thighs, cut into bite-sized pieces
  • 1/2 cup plain yogurt
  • 1 cup coconut milk
  • Salt to taste
  • Fresh cilantro for garnish

Method
 

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and cook until lightly browned, about 5 minutes.
  3. Stir in garlic and ginger; sauté for 1 minute until fragrant.
  4. Add ground coriander, cumin, turmeric, and chili powder; cook 1–2 minutes, stirring constantly.
  5. Add chicken pieces and sear until golden brown, about 7 minutes.
  6. Reduce heat and stir in yogurt; simmer for 2 minutes.
  7. Pour in coconut milk, bring to a gentle simmer, cover, and cook for 15 minutes until chicken is cooked through.
  8. Season with salt, garnish with fresh cilantro, and serve hot with rice or naan.
