Method
- Trim excess fat from pork butt; cut into 2-inch cubes and pat dry.
- Turn the Instant Pot to “Sauté,” add oil, then brown pork cubes in batches. Remove and set aside.
- Add onion and garlic; cook until fragrant. Stir in cumin, oregano, salt, and pepper.
- Return pork to the pot, pour in orange and lime juices, and add bay leaves. Seal lid and cook on high pressure for 45 minutes. Let natural release for 15 minutes.
- Preheat broiler. Spread pork on a baking sheet and broil 5 minutes per side until crispy.
