Instant Pot Pinto Beans (No Soaking)

This easy recipe for Instant Pot pinto beans requires no soaking! Just pop the beans in your multi-functional pressure cooker and let them cook.

Ingredients
  

  • 3 slices bacon diced
  • 1 small onion diced
  • 3 cloves garlic minced
  • 2 cups dry pinto beans rinsed
  • 6 cups chicken broth or water
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 bay leaf
  • Salt and pepper to taste

Method
 

  1. Turn your Instant Pot to Sauté mode. Add the diced bacon and cook until it starts to render fat and crisp up, about 5 minutes.
  2. Stir in the diced onion and minced garlic; sauté 2–3 minutes until fragrant.
  3. Cancel Sauté mode. Add rinsed pinto beans, chili powder, cumin, bay leaf, and pour in the broth. Season lightly with salt and pepper.
  4. Secure the lid and cook on High Pressure for 50 minutes. Allow a 10-minute natural release, then carefully vent any remaining pressure.
  5. Remove the bay leaf. Taste and adjust seasoning as needed. Serve hot as a dinner main or side dish.
