- Turn your Instant Pot to Sauté mode. Add the diced bacon and cook until it starts to render fat and crisp up, about 5 minutes.
- Stir in the diced onion and minced garlic; sauté 2–3 minutes until fragrant.
- Cancel Sauté mode. Add rinsed pinto beans, chili powder, cumin, bay leaf, and pour in the broth. Season lightly with salt and pepper.
- Secure the lid and cook on High Pressure for 50 minutes. Allow a 10-minute natural release, then carefully vent any remaining pressure.
- Remove the bay leaf. Taste and adjust seasoning as needed. Serve hot as a dinner main or side dish.
