This Irish potato candy recipe doesn't contain potatoes; these sweet treats are made with cream cheese and coconut and molded to look like potatoes.

Ingredients
  

  • 4 ounces cream cheese softened
  • 4 ounces unsalted butter softened
  • 2 cups confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 2 cups flaked coconut
  • Cinnamon or cocoa powder for dusting

Method
 

  1. In a large bowl, beat the cream cheese and butter until smooth and creamy.
  2. Slowly add the confectioners’ sugar and vanilla, continuing to beat until thick and fluffy.
  3. Gently fold in the flaked coconut until fully combined.
  4. Shape the mixture into small, potato-like ovals using your hands or a small scoop.
  5. Roll each “potato” in cinnamon or cocoa powder to achieve that authentic look.
  6. Arrange on a parchment-lined tray and chill in the fridge for at least 10 minutes before serving.
