Method
- Preheat the oven to 375°F (190°C). Lightly grease two mini muffin tins.
- In a medium bowl, sift together the flour, baking soda, and salt; set aside.
- In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy, about 3 minutes.
- Beat in the egg, vanilla extract, and milk until well combined.
- Gradually add the dry ingredients to the peanut butter mixture, mixing just until incorporated. Don't overmix!
- Roll the dough into 1-inch balls and place each ball into a mini muffin cup.
- Bake for 8-10 minutes, or until lightly golden around the edges.
- Remove from oven and immediately press a miniature peanut butter cup into the center of each cookie.
- Allow to cool in the pan for 10 minutes, then carefully remove to a wire rack to cool completely.
