  • 2 tablespoons soy sauce
  • 1 tablespoon miso paste
  • 12 ounces ramen noodles fresh or dried, cooked al dente
  • 1 cup sliced green onions
  • 1 cup sliced mushrooms
  • 1 cup nori sheets
  • 1 cup bean sprouts
  • 2 soft-boiled eggs halved
  • Sesame seeds for garnish
  • Sesame oil for garnish

Method
 

  1. In a large pot, combine chicken broth, soy sauce, and miso paste. Bring to a boil, then reduce to a gentle simmer for 60 minutes, tasting and adjusting seasoning as needed.
  2. In a separate pot, cook ramen noodles according to package instructions (3-4 minutes). Drain and rinse under cold water to stop cooking.
  3. Prepare toppings: slice soft-boiled eggs, green onions, mushrooms, and nori sheets. Arrange on a plate for easy assembly.
  4. Assemble bowls: place noodles at the bottom of each bowl, ladle hot broth over, then arrange toppings such as eggs, mushrooms, green onions, nori, and bean sprouts.
  5. Garnish with sesame seeds and a few drops of sesame oil. Serve immediately with chopsticks and a soup spoon.
