Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper freshly ground
  • 3 cloves garlic minced
  • 1 teaspoon lemon juice freshly squeezed
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 cup chicken broth low sodium
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1 teaspoon thyme dried
  • 1 teaspoon rosemary dried

Method
 

  1. Pat chicken dry with paper towels, chop garlic, and measure spices for easy access.
  2. Slice each chicken breast horizontally to create thinner, even pieces for faster, even cooking.
  3. Combine olive oil, garlic, lemon juice, paprika, oregano, salt, and pepper. Coat chicken evenly and marinate 15–20 minutes.
  4. Heat a cast iron skillet over medium-high heat for about 5 minutes until hot.
  5. Cook chicken 3–4 minutes per side until golden brown and cooked through. Remove and set aside to rest.
  6. Melt butter in skillet, whisk in flour to make a roux, then slowly add chicken broth. Stir until sauce thickens.
  7. Return chicken to skillet, spoon sauce over top, and simmer for 2–3 minutes to meld flavors.
  8. Serve chicken topped with sauce and fresh herbs. Pair with mashed potatoes or roasted vegetables.
