Method
- Pat chicken dry with paper towels, chop garlic, and measure spices for easy access.
- Slice each chicken breast horizontally to create thinner, even pieces for faster, even cooking.
- Combine olive oil, garlic, lemon juice, paprika, oregano, salt, and pepper. Coat chicken evenly and marinate 15–20 minutes.
- Heat a cast iron skillet over medium-high heat for about 5 minutes until hot.
- Cook chicken 3–4 minutes per side until golden brown and cooked through. Remove and set aside to rest.
- Melt butter in skillet, whisk in flour to make a roux, then slowly add chicken broth. Stir until sauce thickens.
- Return chicken to skillet, spoon sauce over top, and simmer for 2–3 minutes to meld flavors.
- Serve chicken topped with sauce and fresh herbs. Pair with mashed potatoes or roasted vegetables.
