  • 4 boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/4 cup olive oil
  • 2 tablespoons fresh rosemary finely chopped
  • 2 tablespoons fresh thyme finely chopped
  • 4 cloves garlic minced
  • Juice and zest of 1 lemon
  • 1 teaspoon honey

Method
 

  1. In a mixing bowl, whisk together olive oil, lemon juice, lemon zest, garlic, rosemary, thyme, salt, pepper, and honey until smooth.
  2. Place chicken breasts in a resealable bag or shallow dish. Pour marinade over the chicken, coat well, and refrigerate for at least 30 minutes or overnight.
  3. Preheat grill pan over medium-high heat for 5 minutes. Test with a drop of water—it should sizzle and evaporate immediately.
  4. Cook chicken breasts for 5–7 minutes per side, until grill marks form and the internal temperature reaches 165°F (75°C).
  5. Transfer chicken to a plate, cover loosely with foil, and rest for 5 minutes to redistribute juices.
  6. Slice against the grain and serve garnished with fresh herbs and lemon wedges.
