- In a mixing bowl, whisk together olive oil, lemon juice, lemon zest, garlic, rosemary, thyme, salt, pepper, and honey until smooth.
- Place chicken breasts in a resealable bag or shallow dish. Pour marinade over the chicken, coat well, and refrigerate for at least 30 minutes or overnight.
- Preheat grill pan over medium-high heat for 5 minutes. Test with a drop of water—it should sizzle and evaporate immediately.
- Cook chicken breasts for 5–7 minutes per side, until grill marks form and the internal temperature reaches 165°F (75°C).
- Transfer chicken to a plate, cover loosely with foil, and rest for 5 minutes to redistribute juices.
- Slice against the grain and serve garnished with fresh herbs and lemon wedges.
