Kartoffelklöße (German Potato Dumplings)

Chef John's German potato dumplings are crouton-stuffed balls of mashed potato dough simmered and served with brown butter and more croutons.

Ingredients
  

  • 1.5 pounds russet potatoes
  • 2 cups day-old bread cubes
  • 2 tablespoons unsalted butter melted
  • 1 large egg
  • ½ cup all-purpose flour plus extra for dusting
  • 1 teaspoon salt
  • ¼ teaspoon white pepper
  • 2 tablespoons chopped fresh parsley for garnish

Method
 

  1. Place potatoes in a large pot and cover with salted water; bring to a boil.
  2. Reduce heat to medium-low and simmer until just tender, 15–20 minutes.
  3. Drain and let cool until easily handled; peel and mash potatoes until smooth.
  4. In a bowl, toss bread cubes with melted butter and a pinch of salt; set aside.
  5. Combine mashed potatoes, egg, flour, salt, and pepper in a mixing bowl until a soft dough forms.
  6. Dust hands with flour, shape dough into balls, and press bread cubes into the center of each.
  7. Bring a large pot of salted water to a gentle simmer; add dumplings in batches and cook until they float, about 8–10 minutes.
  8. Meanwhile, melt extra butter in a skillet over medium heat and cook until it turns golden brown and fragrant.
  9. Use a slotted spoon to transfer cooked dumplings into the skillet; toss gently to coat in brown butter.
