- Preheat oven to 425°F (220°C). Wash, core, and rice the cauliflower in a food processor until it resembles fine grains—do not puree.
- Microwave riced cauliflower in a covered, microwave-safe bowl for 5–6 minutes until tender. Cool slightly.
- Transfer to a clean kitchen towel and wring out as much moisture as possible until very dry. This prevents a soggy crust.
- In a large bowl, combine drained cauliflower, 1 cup mozzarella, egg, garlic powder, oregano, and salt. Mix until a dough-like mass forms.
- Line a baking sheet with parchment. Press the mixture firmly into a round about 1/4 inch thick with smooth, even edges.
- Bake at 425°F (220°C) for 20–25 minutes, until golden brown, set in the center, and crisp at the edges.
- Cool 2–3 minutes. Add a thin layer of low-carb pizza sauce, 1 cup mozzarella, and up to 1 cup chopped veggies. Avoid overloading.
- Return to the oven for 10–15 minutes, until cheese is melted and lightly golden and the crust remains crisp.
- Rest for a few minutes for easier slicing. Cut into 4 pieces and serve hot.
