  • 1 cup 2 sticks unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup light brown sugar packed
  • 2 large eggs room temperature
  • 1 teaspoon pure vanilla extract

  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • cups white chocolate chips
  • 1 cup macadamia nuts coarsely chopped

Method
 

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  6. Gently fold in the white chocolate chips and macadamia nuts until evenly distributed throughout the dough.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until edges are golden but the centers still look slightly underdone (this ensures a soft, chewy center).
  9. Allow cookies to cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
