Ingredients
  

  • 2 cups blanched almond flour
  • ½ cup unsalted butter softened
  • ½ cup erythritol sweetener
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ cup sugar-free chocolate chips or chopped nuts optional

Method
 

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and sweetener until light and fluffy, about 2-3 minutes.
  3. Add the egg and vanilla extract to the butter mixture and beat until well combined.
  4. In a separate bowl, whisk together almond flour, cinnamon, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  6. If using, fold in the chocolate chips or chopped nuts.
  7. Using a tablespoon or cookie scoop, place rounded portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Gently flatten each cookie with the palm of your hand or the bottom of a glass.
  9. Bake for 12-15 minutes, or until the edges are golden brown.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
