Ingredients
  

  • 1 can chickpeas drained and rinsed
  • 1 cup cooked quinoa
  • 1 large cucumber diced
  • 1 cup cherry tomatoes halved
  • 1 large red bell pepper diced
  • 1 small red onion finely chopped
  • 1 cup fresh parsley chopped
  • 1 cup fresh mint chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Method
 

  1. Rinse and drain chickpeas thoroughly. Dice cucumber, bell pepper, and onion. Halve cherry tomatoes and chop herbs finely.
  2. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper to create the dressing.
  3. In a large mixing bowl, combine chickpeas, quinoa, and chopped vegetables. Gently fold to mix evenly.
  4. Add chopped parsley and mint. Gently toss to combine while preserving freshness.
  5. Drizzle the prepared dressing over the salad. Toss lightly until all ingredients are well coated.
  6. Taste and adjust seasoning as needed. Add more lemon juice or salt if desired.
  7. Transfer to a serving platter or bowls. Garnish with extra herbs or feta cheese if desired, and serve immediately.
