Mississippi Pot Roast (Slow Cooker)

This classic Mississippi pot roast combines beef chuck roast with ranch seasoning, au jus mix, butter, and tangy pepperoncini peppers for an incredibly tender and flavorful slow cooker meal that's perfect for family dinners.

Ingredients
  

  • 4 pounds beef chuck roast
  • 1 packet 1 oz ranch dressing mix
  • 1 packet 1 oz au jus gravy mix
  • 1/2 cup 1 stick unsalted butter
  • 8-10 pepperoncini peppers plus 1/4 cup juice from the jar
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic powder optional

Method
 

  1. If your chuck roast has excessive fat, trim some of it away, but leave some for flavor. Pat the roast dry with paper towels.
  2. Add the beef chuck roast to the slow cooker.
  3. Sprinkle the ranch dressing mix and au jus gravy mix evenly over the top of the roast. Add the freshly ground black pepper and garlic powder if using.
  4. Place the stick of butter on top of the roast. Arrange the pepperoncini peppers around the roast and pour in the pepperoncini juice.
  5. Cover and cook on LOW for 7-8 hours or on HIGH for 4-5 hours. The meat is ready when it shreds easily with a fork.
  6. Once cooked, use two forks to shred the meat in the slow cooker, mixing it with the flavorful juices.
  7. Transfer to a serving platter, making sure to include the delicious sauce and peppers.
