Ingredients
  

  • 2 cups 250 g all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups 480 ml cold buttermilk
  • 2 large eggs beaten
  • 3 tablespoons melted butter plus extra for cooking
  • 1 teaspoon pure vanilla extract

Method
 

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt until evenly combined.
  2. In a separate bowl, mix buttermilk, beaten eggs, melted butter, and vanilla. Pour into the dry ingredients and stir until just blended. A few lumps are okay—overmixing leads to dense pancakes.
  3. Preheat and lightly grease a large skillet or electric griddle over medium heat.
  4. Pour ¼ cup batter per pancake onto the hot surface. Cook until bubbles form on top and edges look set, about 2–3 minutes.
  5. Flip and cook 1–2 minutes more, until golden brown and fluffy.
  6. Serve warm with berry syrup, fresh berries, or a dusting of powdered sugar.
