- Line a baking sheet or tray with parchment paper and set aside.
- In a medium saucepan over medium heat, combine sugar, milk, and butter. Stir until the butter melts and the sugar dissolves.
- Bring the mixture to a rolling boil. Cook, stirring constantly, for 1 minute to reach the right candy stage.
- Remove from heat. Immediately stir in peanut butter, vanilla extract, and a pinch of salt until smooth and glossy.
- Fold in the oats, mixing until every flake is coated in the sweet peanut butter glaze.
- Using two spoons or a small cookie scoop, drop tablespoon-sized mounds onto the prepared parchment.
- Let the cookies cool and set for about 10 minutes at room temperature or speed up the process in the fridge.
