No-Bake Peanut Butter Cookies

These no bake peanut butter cookies combine peanut butter and oats with no eggs for a flavor-packed cookie easy to make on the stovetop in 15 minutes.

Ingredients
  

  • 2 cups granulated sugar
  • ½ cup whole milk
  • ½ cup unsalted butter
  • 1 cup creamy peanut butter
  • 3 cups old-fashioned rolled oats
  • 1 teaspoon pure vanilla extract
  • Pinch of salt

Method
 

  1. Line a baking sheet or tray with parchment paper and set aside.
  2. In a medium saucepan over medium heat, combine sugar, milk, and butter. Stir until the butter melts and the sugar dissolves.
  3. Bring the mixture to a rolling boil. Cook, stirring constantly, for 1 minute to reach the right candy stage.
  4. Remove from heat. Immediately stir in peanut butter, vanilla extract, and a pinch of salt until smooth and glossy.
  5. Fold in the oats, mixing until every flake is coated in the sweet peanut butter glaze.
  6. Using two spoons or a small cookie scoop, drop tablespoon-sized mounds onto the prepared parchment.
  7. Let the cookies cool and set for about 10 minutes at room temperature or speed up the process in the fridge.
