Oh My Arctic Char! – Zesty Baked artic char Dinner

This artic char recipe uses rosemary, garlic, lime, cayenne, and a big splash of sherry wine for a flavorful topping in this easy, baked fish dinner.

Ingredients
  

  • 1 10 ounce fillet arctic char, rinsed and patted dry
  • 1 teaspoon fresh rosemary finely chopped
  • 2 cloves garlic minced
  • 1 lime zested and juiced
  • Pinch of cayenne pepper
  • 1/4 cup dry sherry wine
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper to taste
  • Lime wedges and fresh herbs for garnish (optional)

Method
 

  1. Preheat oven to 400°F (200°C) and prepare a baking sheet with parchment paper or a light coat of oil.
  2. In a small bowl, whisk together olive oil, chopped rosemary, minced garlic, lime zest, lime juice, cayenne pepper, and sherry wine until smooth.
  3. Place the arctic char fillet on the baking sheet. Season with salt and pepper, then spoon half of the rosemary-sherry glaze over the fish.
  4. Bake for 12-14 minutes or until the fish flakes easily with a fork and the top is just golden.
  5. Remove from the oven, brush with remaining glaze, and let rest for 2 minutes.
  6. Garnish with lime wedges and fresh herbs before serving.
