Method
- Preheat oven to 400°F (200°C) and prepare a baking sheet with parchment paper or a light coat of oil.
- In a small bowl, whisk together olive oil, chopped rosemary, minced garlic, lime zest, lime juice, cayenne pepper, and sherry wine until smooth.
- Place the arctic char fillet on the baking sheet. Season with salt and pepper, then spoon half of the rosemary-sherry glaze over the fish.
- Bake for 12-14 minutes or until the fish flakes easily with a fork and the top is just golden.
- Remove from the oven, brush with remaining glaze, and let rest for 2 minutes.
- Garnish with lime wedges and fresh herbs before serving.
