Ingredients

  • 1 large Vidalia or other sweet onion sliced into ¼-inch rings
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon garlic powder
  • 2 large eggs
  • ½ cup milk
  • 2 cups panko breadcrumbs or fine breadcrumbs
  • Vegetable oil for frying

Method

  1. Gather all ingredients and pat the onion rings dry with a paper towel—this helps the batter stick.
  2. In a shallow bowl, whisk together flour, salt, pepper, paprika, and garlic powder.
  3. In a second bowl, beat eggs with milk until smooth.
  4. Pour breadcrumbs into a third bowl.
  5. Dredge each onion ring first in the seasoned flour, then the egg mixture, and finally coat with breadcrumbs.
  6. Heat oil in a deep pot to 350°F (175°C).
  7. Fry onion rings in batches for 2–3 minutes per side until golden brown.
  8. Transfer to a paper-towel–lined plate and sprinkle with salt.
  9. Serve hot with your favorite dipping sauce.
