  • 1 pound kielbasa sausage sliced into 1/4-inch rounds
  • 1 medium onion chopped
  • 3 russet potatoes scrubbed and cubed (about 1/2-inch pieces)
  • 3 cups fresh broccoli florets
  • 1/2 red bell pepper diced (for color and flavor)
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt adjust to taste
  • Cooking spray
  • Fresh parsley for garnish optional

Method
 

  1. Gather all ingredients and prepare your vegetables. Having everything ready before you start cooking makes the process much smoother.
  2. Spray a large skillet with cooking spray and heat over medium heat. Once hot, add the olive oil.
  3. Add the diced potatoes to the skillet. Cook for about 10-12 minutes, stirring occasionally, until they begin to soften and develop a golden exterior.
  4. Add the chopped onion to the skillet and cook for 3-4 minutes until it begins to turn translucent.
  5. Add the sliced kielbasa to the skillet. Cook for about 5 minutes, stirring occasionally, until the sausage begins to brown and release its flavorful oils.
  6. Stir in the minced garlic, paprika, dried thyme, salt, and black pepper. Cook for 1 minute until fragrant.
  7. Add the broccoli florets and diced red bell pepper to the skillet. Stir to combine all ingredients.
  8. Cover the skillet and reduce heat to medium-low. Cook for 8-10 minutes, stirring occasionally, until the broccoli is tender-crisp and the potatoes are fully cooked through.
  9. Taste and adjust seasoning if necessary.
  10. Remove from heat and garnish with fresh chopped parsley if desired.
  11. Serve hot directly from the skillet for a rustic presentation, or transfer to a serving dish.
