Method
- Gather all ingredients and prepare your vegetables. Having everything ready before you start cooking makes the process much smoother.
- Spray a large skillet with cooking spray and heat over medium heat. Once hot, add the olive oil.
- Add the diced potatoes to the skillet. Cook for about 10-12 minutes, stirring occasionally, until they begin to soften and develop a golden exterior.
- Add the chopped onion to the skillet and cook for 3-4 minutes until it begins to turn translucent.
- Add the sliced kielbasa to the skillet. Cook for about 5 minutes, stirring occasionally, until the sausage begins to brown and release its flavorful oils.
- Stir in the minced garlic, paprika, dried thyme, salt, and black pepper. Cook for 1 minute until fragrant.
- Add the broccoli florets and diced red bell pepper to the skillet. Stir to combine all ingredients.
- Cover the skillet and reduce heat to medium-low. Cook for 8-10 minutes, stirring occasionally, until the broccoli is tender-crisp and the potatoes are fully cooked through.
- Taste and adjust seasoning if necessary.
- Remove from heat and garnish with fresh chopped parsley if desired.
- Serve hot directly from the skillet for a rustic presentation, or transfer to a serving dish.
