Ingredients
  

  • 1 3 ounce package orange-flavored gelatin (Jell-O®)
  • 1 cup boiling water
  • 1 cup cold water
  • 1 11 ounce can mandarin oranges, drained
  • 1 20 ounce can crushed pineapple, drained
  • 1 cup small-curd cottage cheese
  • 1 8 ounce container whipped topping, thawed (e.g., Cool Whip®)
  • Maraschino cherries for garnish optional

Method
 

  1. In a mixing bowl, dissolve the orange-flavored gelatin in 1 cup of boiling water. Stir until completely dissolved.
  2. Stir in 1 cup of cold water; let the mixture cool to room temperature (about 10 minutes).
  3. Fold in the cottage cheese until evenly combined for a creamy texture.
  4. Gently stir in the whipped topping until swirled and smooth—this lightens the salad.
  5. Carefully add the mandarin oranges and crushed pineapple, folding just until fruit is coated.
  6. Transfer to a serving dish or individual cups, cover, and refrigerate for at least 30 minutes.
  7. Before serving, garnish with maraschino cherries or mint springs for a pop of color.
