- Preheat your oven to 425°F (220°C). Place a rimmed baking sheet on the middle rack to heat up.
- In a shallow bowl, whisk together the flour, garlic powder, onion powder, thyme, paprika, salt, and pepper for a perfectly seasoned herby coating.
- Crack the eggs into another dish and beat until smooth.
- Dip each pork chop into the beaten egg, letting any excess drip off, then press into the seasoned flour mixture for an even, crispy breading.
- Carefully remove the hot baking sheet, brush it with melted butter and olive oil, then arrange the coated chops in a single layer.
- Drizzle any remaining butter over the top of the chops for extra golden color and flavor.
- Bake for 15–20 minutes, or until the pork chops are cooked through and reach an internal temperature of 145°F (63°C). They should be crispy and golden.
- Let the chops rest for 5 minutes—this keeps them succulent and makes slicing easier.
