Oven-Roasted Asparagus

Tender roasted asparagus, seasoned with minced garlic, Parmesan cheese, and lemon juice.

Ingredients
  

  • 1 bunch thin asparagus spears trimmed
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon fresh lemon juice
  • Salt and freshly ground black pepper to taste
  • Zest of 1 lemon optional garnish

Method
 

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Arrange the trimmed asparagus spears on the prepared sheet. Drizzle with olive oil, then sprinkle garlic evenly over the top.
  3. Season with salt and pepper. Use your hands to gently toss the spears, ensuring each is coated in oil and garlic.
  4. Roast in the preheated oven for 12–15 minutes, or until the asparagus is tender-crisp and lightly browned at the tips.
  5. Remove from the oven, then immediately squeeze fresh lemon juice over the spears and sprinkle with Parmesan cheese.
  6. Garnish with lemon zest, if desired. Serve warm alongside roast leg of lamb, grilled fish, or your favorite main course.
