Ingredients
  

  • 1 15-ounce can pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 8 ounces cream cheese softened
  • 1/4 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C). Line a 15x10-inch baking pan with parchment paper or grease it lightly.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, and cloves.
  3. In a large bowl, beat granulated sugar, brown sugar, and vegetable oil until well combined. Add eggs one at a time, beating after each addition.
  4. Stir in the pumpkin puree and vanilla until smooth.
  5. Gradually fold the dry ingredients into the wet ingredients until just combined.
  6. Spread the batter evenly into the prepared pan. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the pumpkin bars to cool completely in the pan while you prepare the frosting.
  8. In a chilled bowl, beat the cream cheese and butter together until smooth. Gradually add powdered sugar and vanilla, beating until creamy.
  9. Spread the cream cheese frosting evenly over the cooled bars. Slice into 24 squares and serve.
